As the bran and the germ are completely removed, this flour contains only the endosperm of the kernel. Food to Live's Organic White Rye Flour is a product of USA. It is USDA Organic, Kosher, Non-GMO, Raw, and is suitable for vegan and vegetarian diets. As the name suggests, White Rye Flour aka Light Rye is the lightest version of Rye Flour. It retains a good amount of dietary fiber present in the whole grain, as well as essential minerals like Manganese, Copper, Thiamin, Zinc and B Vitamins. Organic White Rye Flour is perfect for creating sourdough starter. More importantly, this flour will create airy and light bread loaves, with a pleasant flavor that will quickly become our favorite. Moreover, it is great for muffins, buns, marble breads, cookies and chapatis'. INGREDIENTS: 100g Organic White Rye Flour 260g bread flour 40g Organic Whole Wheat Bread Flour 55g active sourdough starter 280g slightly warmer than room temperature water 15g honey 7g salt How to Prepare Rustic Light Rye Sourdough Bread Prep Time: 10 min | Cook Time: 45 mins | Additional Time: 10 hrs | Total Time: 10 hrs 55 mins | Servings: 1 loaf INSTRUCTION: To a bowl, add water, starter, and honey. Thoroughly whisk with a fork, until fully combined. Mix in all flours; first with a fork, then with your hands. Shaggy dough should be formed.Drizzle top of dough with salt, do not mix it in. Cover with a damp cloth and let dough sit for 1 hour, undisturbed. Start working the dough with your hands, stretching and folding, knead the salt into the dough, through your hands and against the bowl (around 1.5 mins). Cover the dough again, and leave to rest for 30 more mins. After 30 mins, repeat kneading twice more, stretching and folding the dough. Cover dough once again, and let sit for 7 hrs in 70F. Your dough should rise about double the size. It will be smooth and puffy with some bubbles. Now, lightly dusk top of working surface with flour, place your dough on it, and shape your loaf. Let loaf sit on surface for 15 mins. Then place dough into banneton dusted with flour, seam side up. Dough will go through its final rise, however it will not double, it will puff up & become jiggly. Leave dough alone for another 2 hours at 70F. Pre-heat oven to 500F (260C), with dutch oven preheating inside of it. Gently flip dough out onto parchment paper and score it. Once dutch oven pre-heated, place your loaf inside and cover it. Turn oven down to 450F (230C), and place dutch oven inside of it. Bake bread for 20 mins covered, then uncover. Turn heat down once again, to 430F (220C) and bake for 25 more mins, until the curst turns golden-brown with cracks. At this point, remove from oven. Take bread out of dutch oven and put onto a cooling rack. Wait 1 hour for bread to fully cool, otherwise inside will be gummy. Enjoy with your favorite toppings! I bought this flour for sourdough starter, which I forgot to feed. But the flour is lovely, good natural wild yeast.
