This bread is just what the doctor ordered. Be warned: it is not a loaf of Wonder Bread or Pepperidge Farm bread, but, to my mind and tastes, it is fantastic.The texture is slightly spongy, and I assume that is from the 8.5 grams of fiber included in the mix. It is that fiber that allows this bread to deliver a stunningly low carb count per hefty slice, so the fiber is well worth the extra chew. The bread is chock full of neat little flax seeds (and others, too) that pop and crunch while you eat. Crunchy peanut butter is wonderful paired with this bread, cheese, too, for that matter. Cutting the bread is best accomplished with a long serrated bread knife over a paper plate or towel, and one great thing is that you can slice thick or thin from the loaf. It slices best when stored in the fridge and is chilled.I am a snacker, sandwich-eater, AND vegetarian. Unfortunately carbohydrates do bad things to my body: They make me hungry rather than satisfied; they make me sleepy; they seem to sap my energy. Bad news for a vegetarian. I remember complaining about being the only fat person in the health food store (everybody else looked like John Lennon after he went macrobiotic*sigh*). Anyway, the point is: high protein/low carb has been a struggle for me. The "eco-atkins" diet addresses this issue, but the weight loss is slower with this diet, and ketosis is hard to maintain; well, WAS hard to maintain.This bread makes all the difference for me. I can have my sandwiches; I can make toast; I can maintain my vegetarian diet and keep a strong ketosis process burning up that fat. If you find that the bread is throwing you out of ketosis, try adding a healthy portion of protein and some fat (like mayonnaise) to your sandwich to counteract that. Stacking protein* seems to be something relatively new (I think) to the low carb process.I order 5 loaves at the time, but I recommend first time buyers purchase the 8 slice pack: same bread, already sliced, and you don't have a lot to throw away if you really hate it. I LOVE it; nothing for me to throw away--not even the little flax seeds that tumbled out. :D*I read that eating protein mid-morning, mid-afternoon, and mid-evening boosts the fat burn.This is a fantastic product. The re-sealable bag really isn't. Haven't tried it un-toasted yet, but toasted with butter, it is great. Positives: low carb, very filling, and tasty. Negatives: cost, price for shipping, and the resealable bag that isn't. At $22 per loaf, you don't want to have to throw any of this away. I don't care how clean you are, every time that you touch the loaf you are taking the chance of introducing mold spores. Freeze the loaf until you are ready to use it, then with as little touching as possible, divide it into 2, 3 or even 4 loaves, each in its own zip lock or other bag. That way, you are limiting the time that each loaf is potentially exposed to germs and mold. I plan to order several loaves, and upon arrival, separate them into 3-4 loaves each, and freeze.I've read some negative reviews about the taste and texture. I've been a low carber for years, and this is the first bread product that doesn't have the taste and texture of cardboardOne of the most difficult things about low carbing is being hungry, and showing up at a restaurant, bar, or other person's house, I'm starving, and the only thing available is chips and dips, etc. This is often way too tempting. A slice of this toasted with butter just before I leave the house solves this problem.I have tried numerous keto-friendly breads with similar ratings, but they all had something "off" about the taste. I wound up throwing them out. I decided that this would be my last purchase as I wasn't thrilled of repeatedly wasting my money.Yesterday my loaf arrived and I froze half and thinly sliced the remainder. I applied my keto-friendly pb&j and was THRILLED at the taste!! I liked it as much or better than the soft whole wheat bread I preferred. And, an added benefit is that it is very FILLING!! :0 I was always tempted to have another slice of carbo-bread but I was fully satiated for hours. Sorry for the lengthy review; I was just so HAPPY to have found this brand. For me, it's definitely worth the money and I only use a thin slice daily.For years i have tried countless low car bread products, and with one, maybe two exceptions they have all been rather disappointing. By chance, i came over this bread from LC. Yes it's a little pricey, but this bread is big. I eat maybe two slices a day and since this bread is fairly firm one can cut thin slices and make it last longer. So to the important stuff, the taste. It's plain and simple pretty darn great. Gone is the "cardboard" taste from most other low carb breads. It has a slightly nutty taste and reminds me of some of the whole grain and/or multi-grain breads sold in stores like Whole Foods and others. Now, if i in the near future could buy these at my local grocery store, the "world would be perfect."I've sampled a wide range of low carb breads and this is as close as I've ever found to "regular" bread. To quantify the difference, I'd say that if a quality loaf of "regular" bread rates a 10, and a bad-low carb substitute rates a 2, then before now the best I've found would rate a 6. I'd put this LC bread at a solid 8.It's not going to fool you into thinking you are eating an artisanal bread straight from a french bakery, but it is good enough that I kept staring at the ingredients label to verify this stuff is actually low carb -- it simply seems too good to be true.I love this bread, just need to figure out how to supply this bread at a lower price. By the time you pay shipping it becomes a very large cost for a loaf of bread, a very nice sized loaf of bread. Need to find a local supplier that stocks this.Definately has a different taste. Now that I'm almost done with the loaf, I have to say that I did like it. I cut my pieces really thin. Less than a half inch. The bread is very filling. I would like a smaller loaf for just myself. The loaf came in a resealable bag. After the first seal it never worked again. The bread is rather expensive. I would order again.
